One of my favorites is what is called a "Mother In Law Plant". It has long stiff fern type leaves. They are hearty and require very little water. You only water them when the soil is completly dry. Below is a good link. I put mine in a big pot and transplated from one pot and now I have 8 plants within 2 years.
